Yemeni Fahsa

Fahsa is a popular meal at lunch in many Yemeni cities. It is a meat stew cooked over a hot fire, in which some chopped vegetables and potatoes are placed. Al-Fahsa differs in its exact ingredients from one region to another in Yemen, but the meat and the method of cooking remain the same.

Ring Ingredients:

  • Two tablespoons of ground fenugreek.
  • Half a bunch of chives.
  • Crushed cloves of garlic.
  • A piece of chopped green pepper.
  • Sliced ​​chili pepper.
  • A few grains of cumin.
  • Salt as needed.


Meat Ingredients:

  • Half a kilogram of meat, cut into medium-sized cubes.
  • Two potatoes, cut into cubes.
  • a little salt;
  • Two tablespoons of vegetable oil.
  • Crushed cloves of garlic.
  • A piece of hot green pepper.


Tomato sauce ingredients:

  • One tomato, cut into small cubes.
  • A tablespoon of vegetable oil.
  • a little salt;
  • Half a head of chopped onion.
  • A tablespoon of tomato puree.


How to prepare

Preparing the meat:

  • Put a little oil in a pressure cooker, and heat it over a medium heat.
  • Add onions, garlic, red peppers, and green peppers, and stir until all of them wilt.
  • Add the meat pieces, and stir the ingredients until the color of the meat changes.
  • Add potatoes, salt, and stir again.
  • Immerse the ingredients in an appropriate amount of water, and leave the mixture on the fire until it boils.
  • Close the pressure cooker, and leave the ingredients inside for at least half an hour.


Prepare the sauce:

  • Heat the oil in a suitable size pot.
  • Wither the onions, then put the tomatoes, tomato paste, and stir the ingredients a little.
  • Add salt, and leave the mixture over a low heat until it becomes thick.


Prepare the ring:

  • Soak the fenugreek powder in water for at least two hours.
  • Drain the fenugreek, and mix it well until it gets a creamy consistency.
  • Put the chives, hot red pepper, green capsicum, mashed garlic, cumin, and salt in the bowl of an electric mixer.
  • Pour the mixture over the creamy ring, gradually, while stirring constantly.
  • Crumble the meat pieces, add the tomato sauce, and stir the ingredients well.
  • Cook the above mixture in a clay pot.
  • Add the fenugreek mixture to the face of the pottery after the mixture boils.
  • Serve Yemeni Fahsa on your trip hot.
